Greeny Green Herb Salmon with Mashed Turnip

Ingredients

  • 3 Turnip (washed and peeled)
  • 4 white potatoes (washed and peeled)
  • 2 tablespoons of vegan butter
  • 1 tablespoon salt (Celtic salt)
  • 2 cloves of garlic minced
  • Salmon (wash with lemon juice and pat dry with a paper towel)
  • Chimichurri Sauce (parsley, cilantro, oregano, garlic, onion, lemon juice, salt, olive oil)

Instructions

  1. Firstly, prepare your mashed turnip by adding peeled potatoes and turnip in a pot to boil for about 20-25 minutes. When turnip and potatoes are soft, simply add your vegan butter, salt to taste, and minced garlic. Mix and mash to your liking.
  2. Secondly, prepare your salmon by washing it with lemon juice and pat dry with a paper towel, bake salmon for about 20-25 minutes at 400 degrees.
  3. Thirdly, add all your fresh herbs to a blender or food processor: parsley, cilantro, oregano, garlic, onion, lemon juice, salt to taste, and olive oil to your liking.
  4. When all is done and ready, dish your meal, serve, and enjoy with love.
